”In cooking, I feel that my passion has kept the same focus for over 20 years: to provide pleasure while being absolutely honest !

What do I mean? To my mind, this honesty must blend two elements: respect for the living things that constitute all the ingredients of cooking (plants, animals, etc.) and the rigours of “objective” work which has nothing to do with preconceptions or with “concepts” and even less with whatever is “fashionable”.

Observing, touching/feeling and tasting an egg or a radish as if it was for the first time.

This is a quest that I embark upon afresh each day.
